Shift+Assign*After button, press the pad.. set to filter.. main window.. then you can record it in real time.

can this method be used if say for example I recorded a sample and later wanted to fade it out ?

The NV slider can't be used to adjust velocity 
only attack, delay, tuning, and filter.

you could set the sample to another pad and set it to decay....
