If I have a MicroKorg synth, that I have a stereo delay on... would it be possible to run the stereo out into a Boss DS-1 distortion pedal, that only has a single input and a single output?

Is it possible to run stereo outs from like a Stereo Aux Outputs or Stereo Output from a synth/drum machine, into a single input and output device, such as the DS-1 and still keep the stereo signal?

If you look on the back of the Microkorg you will notice that the left output is also labelled MONO.
Just plug a single lead between this and the distortion pedal and you will get the full sound including all the delay (but in MONO).
Make sure you leave the right output with nothing plugged in, otherwise the left one will not produce the full sound.
Obviously with the distortion pedal being MONO only, you will never be able to get an actual stereo image through it.

no, unless of course the in/out are stereo on a single jack (rare except for headphones - and you still need a stereo cable to do this properly).
you can hack together some junk to do this, but you could really trash the sound in the process.

a lot of times people think their inputs are broken, but it turns out they are just mixing stereo signals into mono inputs.
