They will work together via midi.... You trigger the s3000xl's sound by midi with your mpc500. So, you need a mixer to mix the sounds of both machines together.

The s3000xl is a 16 bit sampler, just as the mpc500. So, they won't be that different in sound. If you want an 'old sound' you better buy a 12 bit sampler like the s900, s950, Emax, sp1200.
Other 12 bit samplers: s50, s330, s550, W30, Mirage (8-bit).
Or buy a low fi phrase sampler like a Boss sp202, sp303...

If you're only looking for the sonic characteristics of S3000XL, you can just run the outputs of mpc500 to inputs of S3000XL and straight out from stereo output. That's how I use my S3000XL with my mpc1000 to get rid of the harsh characterics in the high frequency range. Notable tip for buying S3000XL, there's differents A/D and D/A converters between made in japan and made in china versions, if you you want that mpc3000 sound, get the made in japan version.

@Kerberos The 3000XL Japanese and/or Chinese version will not sound like the MPC3000. They don't even utilize the same sample engine as The MPC3000.

The S2800/S3000/S3200/CD3000 - non XL S samplers are the ones that share the same sample engine as the MPC 3000
The S2000/S3000XL/S3200XL/CD3000XL series all share the same sample engine as the MPC 2000/2000XL.

When comes to sample engine, you're absolutely right. But you might've noticed that I wasn't talking about sample engine, I was talking soundwise about the ins and outs.
