Should you record in stereo, mono L, or mono R? Which is better and why

Its not what should you do, its what you would do.

Sampling in stereo and mono is totally up to you.

However, I prefer sampling in mono because you get more sample time like Walmartian said. Also I get better control within a DAW because I find it easier to work mono samples than stereo samples. Things can get wonky with stereo samples like needing two tracks to keep the stereo dynamics of the sample. If you put a stereo sample on one track, the whole sonic dynamics will change drastically and you'll wonder why it doesn't sound the same.

With mono samples I can pan them and alter them and then create a two stereo track song at mixdown.

Though I do sample in stereo, sometimes but I'm aware how to handle them.
