yep from what you say it sounds exactly like your outputs are dirty.
of course, im assuming you are using the SAME CABLE to test (ie not different cables in the 8outs and stereo)
if you arent comfortable with a soldering iron get your MPC professionally serviced, a good all-round service will do it good
if youre down with opening it up, give all your contacts a clean (all the 1/4" sockets) with deox... NEVER clean with WD40 or other petroleum based cleaning/protecting agent
also check that the stereo outs arent damaged or loose. this is where the soldering iron might come in handy. use a heat-sink when soldering though cause over-eager solder action can warp the board.

get it serviced. Chances are that the "white noise" aint the only problem with it. About a year ago I took my MPC in to fit one of the optional boards (like hell im going to do that myself, i have problems screwing in light bulbs) and while this was being done the techs recognized (and fixed) another problem that I didn't even know about. I guess that there was a loose connection in one of the audio ins so that all my samples were ever so slightly distorted. The funny thing is, if you use the MPC alot as your principle musical tool, you won't notice slight degradations in sound quality while they're happening untill they are painfully obvious.
Just be sure to choose the right place to take it to. Usually the people who will do the best job are not necessarily the people who sold you the MPC in the first place.
