I did the troubleshooting with 2 different MPC's and 2 Fantom keyboards and isolated it to one particular MPC.
No matter what MIDI channel I'm using on the MPC , when I strike certain keys on the Fantom it still plays the sounds that are loaded on the MPC. So say I'm supposed to be playing "MIDI: 1A" it plays the the sounds on the MPC that it should only be playing when I'm on a DRUM track instead of a MIDI track.
Is there a MIDI receive preference I'm missing?
