So I've tested 2 different model Zip drives. I'm not sure what the first model was. It's not on the bottom label. But it might be the Z100S. The motor keeps spinning (and this model sounds like it's had it's mileage), it won't allow you to boot up the OS, and it also has a delay in being recognized by the MPC2000.
Today, I got the Z100S2 and there's a whole world of difference to be noted...
It's faster
It's recognized immediately by the MPC2000
It allowed me to boot the OS from the zip disc instead of the floppy (the other model didn't)
It stops spinning and goes into sleep mode, and reactivates upon going to Disc mode
Now this is totally the ideal model for the MPC2000. For anyone with a 2000XL, this may be worth noting. I'm sure someone will verify the same or similar results.
