instead of having only a left/right outs for ALL the tracks in the MPC, the 8 outs gives you 8 outs instead to go into your mixer/recorder. Its used for mix down purposes. So you can have just the snare assigned to out 1, the kick to out 2, the high hat to out 3, and so on..... Then instead of having all your drums tracks in one left/right stereo track in your mixer/recorder, you will have all the instruments seperated to different tracks....Having seperate tracks for each drum will help you blend your drums and melodies together during mixdown (i have found) - i think the 8 outs are almost estential if you are using an external midi deviece along with the MPC (sound module/synth), i dont really like the mixer found in the MPC, i feel pretty limited (the 8 outs then takes care of that problem). You can also EQ each indiv drum in the mixer/recorder (i think you can EQ in the MPC - not sure though, i've never needed to do it since i got 8 outs).
Also, if you are sending all your MPC data into a digital recorder (i use a roland 1680), you should hook the two devices up via MIDI, thats also makes mixdown A LOT easier (for overdub and tracking purposes). If the recorder and MPC are hooked up via midi you can then seperate all your tracks by just using the outs on the MPC, and soloing certain tracks...
