Mpc 2000xl and Emu Keyboard (Please Help)

Hello all, I need help from anyone who have or has used the emu keyboard midi to a mpc 2000xl. My question is how do I change my midi data with the mpc without having my other recorded midi data change sound. When I record on midi track 1 and go to midi track 2 and change the sound my sound on midi track one also change. I have read the manual but can't get the settings right. So if anyone use a emu keyboard like the vintage keys, mophat or any keyboard within that line and have it midi with a sequencer like to mpc can you please help me out.
