im about to get a 2000xl and i have a short period of time to return it if something wrong. i want to know how to test it to the fullness make sure all options work
You can do a few basic tests by following the instructions on this page:

it tells you how to test the PADS , the RAM, JOG WHEEL and the NV SLIDER
.You should also test it works ok with a SCSI drive (Like a zip) to make sure the SCSI fuse is intact. (But make sure the machine is off before you plug or unplug the SCSI cable).
