Technical questions for the MPC2000xl and the MPC2000

I recently copped a USB zip to use for transferring files from my macbook pro to the 2Kxl via the MPC SCSI Zip. I've tried this, and the same thing has happened with 2 different discs now:

Format Zip in Disk Utility to "MS-DOS" format (ie FAT-16) and make the name of the disk "ROOT". Add a couple files to the disk, and at a certain point it can't copy anything more (after couple of Megabytes), and I get "disk input/output error". Sometimes I've managed to load the files into the MPC after, but now, what happens is:

-I insert the zip into USB zip, the MAC can't read it and asks if I want to format it, I say yes, try and format it in Disk Utility and get the "disk input/output error". So, I can't format the disk on the Mac, and can't transfer any files b/c it can't read it. I load the zip into the MPC, and it has ????? when I go to SCSI-5 (for the SCSI zip) - I go to format on the MPC and it gives me an error as well - saying that it can't format the disk.

Is it possible that my USB Zip drive is the problem here? I bought it used, maybe its a cr**py one or something? Or should I get some new disks? Or, haha just do the CF upgrade? Well, thats the plan eventually but I'm hoping to get the Zip up and running first.

Any Suggestions from peeps with similar setup/problems?
