Pro Tools is a 32bit application, meaning it can only in theory access 4GB. This leaves the rest of the memory for OSX or such, which leaves double the recommended ram for Snow Leo. So, the issues you were having are not due to a lack of memory. If anything, it was a setting, incompatible plug-in that needs to be updated, or a random thing. 8GB is actually even enough for intermediate video work and even modern web design can be done on machines like 6yrs old (requires hardly anything, unless doing heavy Flash work). You can get more ram if you just want or think you'll need it, but nothing you're saying right now really warrants it.
Try leaving one CPU free in Pro Tools.
