Off top I can't recall which ones, but a couple of clever app designers had set it up where the higher up your press the key gets translating into velocity, certainly better than nothing. Why more haven't done this is beyond me. The only other way the iOS devices can do velocity is a variation on the old SP1200 internal piezo mini-mic sensors that track the audible finger press and scale off that. I believe it was a Sonoma drum app that used the device's in-built mic, but I think at most only one other app tried this method.
We'll just have to wait about 2 years when some of the newer touchscreen tech that allows for this sort of thing trickles down to mass market. In the meantime the Camera Kit/MIDI solution and a USB controller is the best method, although obviously convoluted. I've hooked up a nanoPAD and an M-Audio board and the results were very good, but not all apps support it.
