What's up funklove. I run an AW16G myself. Unfortunately my 2k has no 8 outs, but c'est la vie.
I run a few other pieces of gear, however, and together they eat up the 6 available non-mic ins on the back of the unit. (Karma, s5k, ES1 and the MPC) Each unit consumes 2 ins. This is great for recording simultaneous tracks from all units simultaneously, as compared to my old situation where I either tracked one device at a time or was forced to mix pre-recording, which didn't open up major effects, EQ and dynamics options to me.
A lot of the time, however, I end up putting an entire track together on just one device. (usually a sampler but for occasionally the Karma) I often wish my MPC had multiple outs as this is my most frequently solo'd piece of gear. That way I could compress my drums during the recording, separately from my bassline and my loop or my 16-level'd horn hits, etc. Often times I lay down tracks in one go because I'm lazy and I like to do a lot of on-the-fly muting and soloing with the MPC. (and other devices) This often results in oddly-compressed tracks which jump too much, and unless I take time to track each instrument separately, I'll keep getting this.
Make use of your 8 outs, dude.
Of course, I don't understand the relevance of MIDI in the question. Whether you're using the MPC alone or with other devices, multiple outs is a great solution to mixing problems.
