The 1k has 4 output on the back that can plug into a mixer to control those four tracks on an external harware mixer. Lets say I use 7 tracks on my mpc1k, is it possible to control all 7 tracks using a hardware mixer or only 4 of the 7 tracks?

I think you can control six beacause of the main outputs.
