thepillage, you can record 2 tracks at the same time by panning one hard left and the other hard right. i do the same way you do and it takes forever. this cuts back your time by half.
i usually have upwards of like 30-40 tracks i need to record, so this was a lifesaver.

my example for u dont need to do dat **** is the champion sound album. the whole joint was 2 tracked and overdubbed for lyrics.
setting levels in the mpc isn't exactly what i would call mixing. I prefer to run my sounds through my outboard gear once tracked out to my mac.
Guess it all depends how lo or hi fi you are trying to get with your productions.
I've mixed a few songs that were laid over 2 track beats and believe me, they would have sounded 10x hotter if i was able to tweak every sound track by track.
