Say you want to make a track at 100BPM. You set the MPC to 100 BPM and "pretend" that you are recording a sequence. The MPC's built in "click" track will act like a metronome that you can then match the BPM on the record to. Basically, use the pitch control on the turntable to match the tempo on the record to the tempo the MPC is playing back at. Once you have the tempos matched, you can then sample directly in to the MPC and if you trim the samples in to 1 or 2 measure chunks, the beats should match up well enough to sound ok. Adjust the playback tempo on the MPC until they match perfectly, you should only be a few BPM off if you have done it correctly.
If this makes no sense to you, you probably need to get something that can timestretch.
