On a pic I have of the MPC1000, above pad 4 it says 'disk utility'. However, on my 1K (brand new) it isn't there. Anyone know what this is all about??

I don't have that on mine either, it might have been just a prototype. Some companies remove features, when they see that they are running out of time or budget.

The case does have space for a hard drive...maybe they switched to CF when they couldn't make it work/couldn't hit the price point?

There is the disk utility bit in the load/save section which formats the CF card. Maybe there was originally meant to be more to this, and/or as mentioned the hard drive issue. Hmmmm!
