Hi guys I am thinking about buying an mpc1000 and was wondering if you could plug in regular (ipod headphones) headphones into the front headphone jack?

That would work if you had a 1/4 inch adapter. But I would highly recommend the sony mdr-7506's, they also come with an adapter.
