taking full advantage of my 8-out?

I was wondering if anyone could advise me how to set up my 8 out on my MPC2000 so that i can record separate tracks so that once i have it in my computer i can mute parts, move parts etc. after i have recorded the song. i am really bad with computer software and have no idea what i should be using. currently got MacBook and and MPC2000. that's bout it. any advice would be much appreciated.
