How to Determine How Many Channels You Need On A Mixer:

You need to see how many outs all the equipment you have has.

Equipment:Akai MPC 1000, Korg Microkorg, and Turntable.

Number of Outs
Akai MPC 1000:2 to 6 outs(depends on if u use the 4 assignable outs)
Korg Microkorg:2 outs
Turntable:1- 2outs

Total:5 to 10 channels

So should I get one with at least 10 channels?

id say as a rough thing see how many outputs you need, then add a little on. I know a man who is making money outa music and gets away with 16 channels but he has a computer as well as mpc and decks.
