recording MIDI, as opposed to audio (pertaining to ext gear)

If you had 2-3 external synths and an MPC 1000/2500, would there be any advantages to recording the MIDI only of the external synths for the duration of the song? Example would be 5 sequences (intro, verse, chorus, bridge, outro). Recording & sequencing only MIDI for the ext. synths and having all my drums & percussion as .wav audio files being sequenced on drum tracks on the MPC.

Then when I get ready to track out to the DAW, just hit play on the MPC and have it play all the sequences and the audio would be recorded from the audio outs of the external synths into my multichannel interface mixer?

Anybody work like this or could offer insight into this workflow and any thing like MIDI latency or other issues that may congest this workflow? Would the MIDI "drift" after 3-4+ minutes of playing?

I was thinking this way could really help cut down on MPC voice polyphony. Basically just using the MPC as a big piano roll/note editor for the external gear.

I'm no expert but, I assumed that's how the majority of us use our MPCs. I do notice a drift in the sync for the first bar or so though. More often than not, when tracking out, I don't use the midi sync. I just wait for the count in and hit play on the MPC.
