I've fallen in love with the MPC workflow over a few weeks with a One at a music store, but before I purchase I'm concerned about the lower-speed connectivity (USB 2 versus 3) on the One versus the Live 2.

Would the Live 2 provide me with any performance benefit versus the One due to its use of USB 3 versus USB 2?
(What I hope to do is connect an audio interface along with a MIDI controller as well as using MPC Software via controller mode.)

If I do go with the One, would there be issues using a USB hub to connect a MIDI controller and audio interface?

USB3 is faster read/write than USB 2, although when it comes to storage you're more likely to be using the SD card on the MPC One which is very quick, assuming you have a decent class 10 SD card. Loading and saving times are also somewhat limited by the MPC firmware itself, so in real world terms the differences are negligible IMO. I ran some tests here:

USB 3 provides greater 'bandwidth' than usb 2, perhaps this could be advantageous if you were running a boat load of MIDI and USB devices simultaneously, but personally I've never experienced any problems with the MPC One in that respect. No problems in controller mode either.

Basically usb 2 vs usb 3 is not a reason to choose the Live 2 over the One. There are plenty of good reasons to go for a Live 2, but also plenty of reasons to go for the One. Here's some thoughts:
