It's the kind of question like: "When do you eat breakfast?" : )
But seriously, it all depends on the situation and how you fell the samples, what you want to do with them.
Basically I stopped using swing option as it moves the notes into more less quantized places. For example, if I want to record a hihat with that human-feel in it, as the notes are not in the exact same place throughout the whole track, I can't use swing afterwards, cause it will bring the notes I recorded into quantized spaces. I would like to have in MPC something like in Cubase, where you can create your own quantization schemes and reuse them.
Anywho, to answer your question at least a little, I would mainly use swing for hihats, kicks, claps and so on. All the percussive sounds I suppose. But it can be used on anything, you can make a straight beat sound mad and flip it crazy with this function, that's the place where you can get creative and unique.
