I'm a newbie too but I learn 80% already of what I need to make music.
Go to global and turn-off Default items.
Whats gonna happen is, each time you open the mpc, or clear the mpc memory, all programs and multis are gone.
Kind of having an empty rack in Reason.
Now, when you want to create a new song, go in program, click window, and create a new program.
Then, go to multi and do the same thing. Go to mix tab of the newly created multi, click window, and create up to 128 parts, I always do 15 to start, so it gives me 16 channels on the mixer.
Now you're ready to create a fresh song.
When you save your song, make a new folder named after your song, and always save the multi, the song and the program with the same name of the song.
When you're done working on a song, save all the memory to the folder, and clear your memory (Global, memory, clear memory, do it).
Now load the folder where you saved your song, and it's automatically gonna be like you saved it. Because if you dont turn off default items, when you load a song the mpc assigns your sequences to the default multi, and default programs.
I do it like that and my workflow is faster.

The mp is a great machine, once you learn it, you dont want to go back to software.
