Using external midi device linked to mpc to trigger effects

Alright i very vaguely know much about this, i jus bought a 2500 its in the mail right now and i also purchased an MPK 88. Since i jus bought a novation zero sl mkii i was thinking i wont have much use for all the faders and knobs on the mpk 88 but im wondering can i link the mpk 88 to the 2500 and map the faders and knobs to my daw somehow to insert plugins to pads or sequences in the 2500? i dont even know if that makes sense lol. i am basically trying to do exactly what this guy is doing

Also can anyone explain how to record each sequence separately using the 8 outputs? And the benefits of doing so?
