Can the 2500 sample at 12 or 8 bit? Or at lower sampling rates? Or the main sampling screen has a 44100/16 bit resolution only?

You cannot lower the sampling rate on-board the MPC 2500. You will have to do it externally and sample into the MPC 2500.
