I couldn't find a good explanation of how to do this so I'm putting it out there for anyone else who has to go through what I just had to do (I'm going to try to be as clear as possible because I dont have a camera and this shit is crazy inside. Also sorry for the grammar and being long winded. I'm not an electronics dude normally). I was running jjos 3.10 by the way and had sensitronic sensors. I replaced them with sensitronics from mpcstuff.com.
First of all if you hit a pad and its triggering other pads your shit is going dead. They'll stop working eventually. For me it happened when I would press a pad, not let go, then press down a little harder (sometimes it would happen very fast and I felt as though I was hitting them normally but it was doing this). Something about the velocity was setting off other pads (only in the same row for me but every row did it and every pad in each row did it). After about a day of this they died completely.
To take the mpc apart follow the instructions here. They get you close here but its just the door.

Now for replacing the sensors this video is of a 2000 and the principles are the same but the mpc 2500 has some differences that I will explain

This isn't my mpc but you can see on the outside of the grey pads there are 5 screws. 1 on top 1 on each side and 2 on bottom. There are little grooves in the orange shit to make room for them on the sides and top the bottom ones are just in the grey part. Those hold the seat that the sensors are attached to.

When you open up the 2500 the sensor's ribbon wraps underneath the piece that the sensors are seated on. You're going to have to unscrew all of it's screws (the 5 shown in the picture) and carefully pull it out. I personally had peeled the sensors off at this point but they were still attached to the plastic piece underneath. There are cables attached to the bottom of the seat so be gentle and make sure not to pull them out. Just lift it from the bottom so you can see the chip that contains the plastic piece that the ribbon slides into. There are some cables sort of held to the bottom with a little twist tie type thing. You can bend that out of the way and give them some slack then loop them back up when you're putting it back together. You'll see what I mean.
You need to unscrew this chip from the bottom of the seat. To do this you need to lift the seat at a good angle so that you're not straining those cables but so you can get leverage to unscrew the two screws that hold it in place (mine were really tight so I had to use a bigger screwdriver after struggling with it for a long ass time like a fool). Once you do this you can completely remove the seat and I would recommend cleaning it at this point out of convenience.
After the seat is out of the way remove the old sensors by pulling out on the tab (much smaller in the 2500 than that 2000) and toss em. I didn't need to cut my ribbon at all either I just stuck it in to the plastic piece and screwed the chip back on to the bottom of the seat. At this point I screwed the seat with the chip attached, ribbon locked in, and cables hooked on to their twist tie back into the mpc.
Another difference from the 2000 video is the little holes that you use to align the senors on the seat. The 2500's are on the bottom right and upper left. I peeled off the little sheet entirely and carefully lined the sensors up using a small screwdriver like the video says. I started from the bottom right and worked my way across ending at the bottom left (where the ribbon wraps around). Be careful not to fold or crease the ribbon I guess that will **** it up I don't know I didn't do it. Once it's all stuck on there and folded flat and everything just put the pads back on and reassemble.
Although time will tell when I powered the 2500 back up the pads worked just as they should. I hope this helps and doesn't just confuse people. I'm not the best writer and I took a victory bonghit before posting this.
