Difference between sampling in 12 bit Vs loading 12 bit

i have a 2500 and i was wondering would there be a difference in lets say if i had a mpc 60 or sp 1200 and I sampled a sound with it and then i resampled it into the 2500 Vs if i saved the sound on the 60 or 1200 and then converted it and loaded it into the 2500. What would the difference in sound be or will there be a difference.

it probably wouldnt lose any of its original character being the 2500 is 16 bit, converting up bits doesnt really improve the original sound but converting down makes a sound sound grittier.dont get me wrong though, recording at higher bits gives a truer representation of the original sound.
