Ok..so I know you can burn samples to a cd, but is there a way to burn a song (or sequence that you converted from song mode)?

actually, i don't think you can burn samples to a cd as a data disc.

what you can do is burn an audio cd where each track is made from a different wav file. just resample your sequence from the main-outs so that your beat is in a single wav file. you should then be able to burn that to a disc and close the disc whenever you like.

sorry...how exactly do i do that?

go into record mode. change your input to main outs. press record to start recording your sample as you would record any other sample. then press play on the transport and it will start "sampling" your beat.

when you're done recording the sample, press the "keep" button, and then you should be able to go into save mode and burn that file to cd.

i believe burning cds is explained in the addendums to the manual, if not in the manual. if you don't have the manual or addendums, you can get them here: http://www.akaipro.com/supportdocuments.php#MPC2500

it's only letting me record 11s of it...is that because i have used up my ram for that session

you either only have 11 seconds of sampling time left since your memory is all filled up, or you need to increase the amount of time that it's set to record. prior to recording, highlight that 11 seconds and spin the data wheel to the right to increase the sample time.
