jjos and chopping

hi all, i have jjos 4.99 and im new to mpc as of today!

i was watching a vid http://uk.youtube.com/watch?v=Aq-T6eQBDQE and i can see the guy can selection how many regions he chops into but i cant seem to. Is it possible to do this on my os?? also is thier a big difference between my os and the up ( i have look at chart, but wondered if some one can do a better job at explaining?)
