Someone saying they don't quantize ever doesn't mean their drums sound good. Or even that they have a nice groove.
This isn't quite true, you don't even have to PLAY perfectly because with quantise off you can use step edit and put the hit anywhere on the sequencer you want.
So you only have to HEAR perfectly. I basically play and record as close as I can but not every hit gets recorded exactly where I want it... I still have to go in and manually change some of the hits so they land right. Or re-record until you get it right.
Not using quantize doesn't mean you necessarily have perfect timing. It just means you have more freedom because you can put a note anywhere you want.
