I used to have a 2000XL and I really liked the way you could adjust attack and decay parameters of each note but I can see you don't have that with the 1000 even with the os update. It also seems that when I chop samples, they clip whereas they didn't in the 2000XL. Any advice?

in the program edit window, place the cursor over the pad volume window and press the window button to access attack and release.
i dont understand the clipping part of your question. do you mean the loudness of the sample? either adjust the volume so it doesnt clip, or if you are refering to the overall output, go mode + pad 9 i think(other) and adjust the output from 0db to -6 or whatever.

yo thanks for that tip, what i meant by clipping is that when you chop the sample at the beginning and end of the sample click.

you just have to adjust sample start and end points. if i chop something and send it to a program, then find out that i have clicks, i either go into trim mode and adjust the start/end point of the sample, or adjust the attack/decay so to get rid of it. it just depends on the sample.

os1 has Attack and Release settings (it calls release "decay")
os2 has full ADSR settings.

when you say "clipping" your terminology is wrong. "clipping" refers to overloud audio which peaks beyond the ceiling of your device. what you hear is "clicking" from placing your chops on a non-zero crosspoint in your audio.

other mpcs have a small default attack which it places overtop sliced samples. it's a very very small fade in/fade out which prevents this clicking noise from occurring. it's like a "forced-zero crosspoint."

jjos wisely removed this to give more independant control to the slicer. to avoid the click, 1 - make sure your slices occur on zero crosspoints. option 2 - don't worry about zero crosspoints, and do this isntead: after slicing samples enter GPE, select WHOLE and adjust the attack for ALL PADS to a very small setting, like 1 or 2. this will get rid of the clicking as well.
