That's how it works man. Select your mute group and turn pads on or off for it. For a faster, better, more clear explanation that you can access in the future, the manualhttp://www.akaipro.com/mpc500is your friend.
Sometimes I still laugh out loud about the beat kangz and that time some English dude hacked the Akai marketing website and stole a bunch of pictures of the Ren before it was released.

I think you're talking about Track Mutes. Mute Groups can be found in Program mode, mute group numbers go from 1 - 4. I don't have my 500 with me but when I get home I'll check.

no its not track mute its definitely mute groups. The problem i am having is if i want to use mute groups on a hat and a snare it will cut off the sample thats playing as well cus its a got mute group as well. in that vid i posted the guy is assigning mute groups to different numbers which correspond to which sample you want it to cut off .my 500 doesnt bring them numbers up in mute groups? if that makes any sense to you thanks for all your help

i just watched the vid and if your MPC doesn't have what his shows then there must be something wrong. I unfortunately can't check mine til later. The only thing I can think of is if you have an older version of the OS???
I'll check mine later and let you know

It does have numbered Mute Groups because I used to have the drums and certain samples cut each other off to create change ups.
I would reinstall the 1.31 OS and try again because that sounds like a glitch.
