:lol: I don't think it is possible, would probably have to ask Akai why they didn't implement recording of track mutes/solos.

Probably have to record the stereo audio outputs into a DAW audio interface, with either the MPC synced to the DAW via MIDI, or using an audio sync marker/sound/sample at the start &/or end of every track, and zooming in and visually lining them up once the individual tracks are recorded into the DAW.

Another method might be to mute/sole tracks and bounce internally within the MPC to new sample files, save them as WAVs, transfer/load them into the DAW. This is done via the MPC Record Mode, change the Record: field to MAIN OUT. This would also probably require an audio sync marker/sound/sample at the beginning of each track, to line up one in the DAW, or to trigger the recording threshold at the same place/time on each track (not sure how accurate this would be).
