Not sure that's even possible. MPC Editor will export either WAV or SND same two formats it loads.

AU is Apple's plugin format, AIFF is their audio codec. But again I see no possible way MPC Editor would be exporting as AIFF.

Also MPC Editor is for making 3000/2000/2000XL PGM's, this post is in the 500 section.

If it is a 500, use this instead - http://mpcmaid.sourceforge.net/

Windows incoreectly identifies MPC SND files as AU files. Ignore this, it's not a problem. It sounds like you have seelct MPC3000 or MPC2000 format as the export type - make sure you select MPC2000XL and you'll get WAV files.

Regardless, your MPC500 will read the SND files and MPC3000 PGMs fine - but your computer will not play the SND files.

If you watch the video, he doesn't actually show you the exported folder, if he had done, it would have shown SND files (based on the 3000 format selection). The WAVs on screen are the exports from Recycle, he's exporting to a different folder. Plus it looks like he'd already performed all the MPC conversions previously and was just going through the motions for the video,s o he left it at the default 3000. I suspect he would have selected 'MCP2000XL' as the export format when he was actually performing the original kit creation.

Also worth noting that MPC Editor can just save the program only, so rather than 'export prgm and sounds' he could have just saved the PGM only in the same folder as the Recycle chops and it would have happily read those WAVs when loading in the 500.

Regarding the 3000 export - the MPC3000 uses SND as the 'native' format, as does the MPC2000, so SND export is really the requirement.
