Default Save Path ?

Hi,
is therer a way that I can manually set the default save path for programs ?

Currently it also alwas promt me to save at:
/Users/ansolas/Documents/MPC

But I want it somewhere else

I think the only way is through an alias, but I'm not sure how that is done...
There was a thread in the past months talking about that.
