Well, I finally went ahead and did this, and it was pretty easy but there was one problem...
When I took the display out, I unhooked the plastic guard that goes over LCD screen. You don't need to do this to get the old EL panel out (should just slide out), and you shouldn't because the plastic panel is there, in part, to apply pressure to the LCD screen. If there isn't enough pressure on the LCD, sections of the display will be screwy-looking or blank. I ended up just pushing the metal tabs that hold the plastic screen in place down harder, but there were a few minutes where I thought I **** the whole display up.
Looks great now though.
