Aside from being a classic, is the MPC60 outdated and useless for professional musicians?

That being said, I love the 60. I don't need it to do all of the stuff that the newer models can do. The 60 provides plenty of options for making good music.
Shadow, Premier, Public Enemy, and tons of other great artists have made classic recordings with MPC60s. I read a 2006 interview with Jermaine Dupri where he said he puts all of his tracks together on his MPC 60II, and that guy has been making very popular commercial music for a long time.
