Share your knowledge on these two classic MPCs

Hi! Great forum everyone :) I am new here and this is my first post, i would like to apologize for my stupid question because i guess this is a little bit elementary. But anyway, ive recently bought an MPC 3k, im not experiencec at all.
But everytime i try to record a drum pattern wich i make myself, the sounds get so different in volume, is it because my lack of technique or are the pads just too sensitive? Thx for all replies :)

The Button that says FULL LEVEL.

That would be the NOTE VARIATION ASSIGN button. The FULL LEVEL is the second one up from that.

The dynamics are ON if the FULL LEVEL button isn't engaged. This means that the harder you press a pad, the higher the velocity of that sound. By engaging the FULL LEVEL button, all pads will respond at full velocity.
