what does "sample" do in MPC beats

there are some tabs "Program", "Preset", "Project","Sequence","Sample" on the right hand set of the panel, what are the differences between these tabs? I have been searching on Youtube for tutorials but none can clarify the confusion.
what does "Sample" do , why they "Chop" the sample in some youtube videoes

You need to buy The Bible, it'll get you up to speed in no time.

I assume you are referring to the File Browser - the tabs at the top are the file type filters, select one of these to only show that type of file.

First step should be going to the 'Help' menu in the software and selecting 'MPC Beats Help > MPC Beats Manual'. This will explain the basic core concepts of the MPC, including use of the file browser.
