hi, i have bought an akai mpc one, have been sitting and playing with it for a few hours and now it is starting to adjust in sound and balance by itself. I'm new to MPC so now I'm looking for professional help. thanks in advance

Did you accidentally record automation?

Like above it sounds like you recorded some automation......best to press the erase button.... select the track you're having the issue with.... highlight automation and "do it".... this will remove any recorded auto from that track.
If its not this..... then errrrmmm.... hmmmmm lol
