You can compare photos of the two yourself and see what buttons are missing/included on the MPC X versus the MPC One... just say'n.

Where the MPC X shines is the fact that it comes with 16 QLINKS with OLED displays, giving you instant access to a lot of editing parameters. But MPC One does have a few more buttons on it, ironically. But it is also missing many that the X has (number pad, directional arrows, and a few others at first glance). I own the MPC Live 2, though, so maybe someone who owns both an X and a One will chime in. But the short answer is: Yes - you can use the MPC X without having to menu dive into the touch screen much.
