You can fake odd time signatures by combining two bars to make a 7/4 bar or a 5/4 bar (4+3=7 and/or 4+1=5).
Since you still can't create a 3/4 bar or a 1/4 bar you can speed up a 4/4 bar to make it play like a 3/4.
At a tempo of 100 bpm the first bar is just that, but the second bar is 133.33. Then you get the 4 + 3 solution, ie a "7/4"-bar.
And the 5/4 is created by running the first bar like before at 100 bpm, but the second bar at 400 bpm, making it in essence like 1/4 bar. Together: a "5/4"-bar.

Not an easy or pretty solution, but at least it is a solution while we wait for proper time signatures.

You do seem to able to use odd time sigs if you rollback to 2.15, and change your default time sig to whatever you need. Now when you re-'upgrade' to v3, the all new songs are now in that time sig.

I've tested this only for 6/8. And I haven't tested what happens when you then load a song written in (eg) 4/4; but maybe a (very long-winded) workaround

That’s WAY easier than changing the number “4” to a “3” with the encoder on the main screen - hahaha.
Props for figuring this out, but this post is a great picture of just how broken v3 is.

IMO it's much easier to just concede your writing style to the limitations of 4/4 bars. All 5/4 passages are written using 5 measures of 4/4, 3/4 three measure etc. so 5/4 passages must be 4 bar lengths for example. It's frustrating, but a lot less hair pulling than consistent tempo changes.

The fact that tempos have improved in 3 with speed up, slow down possible etc. makes me hopeful that the MPC isn't getting Maschines limitation, Akai are going to add it back in, they just suck at communication.
