Very interesting Firmware.
Probabilities are what I waited for a long long time. Thank you so much Akai. I don't understand why they talk only about 3 probabilities settings (25%, 50% and 75%) on Akai site when it seems linear settings in the videos. But never mind. Both scenarios are very cool and I'm not very interested in 32% or 87% probabilities settings
Ratcheting was very interesting also as presented in the first video but I discovered now with new videos that it can be recorded in pad performance mode which is (if i'm not mistaken) much much more powerfull than tweaking it in piano roll.
The other new features are cool also but these two ones are clearly those which impact music creation directly.

I hope they made the automation easier to just live record in over your beats without having to go into looper

... and let's pray for a better file management. More than one user template is required, as an example.

Timestamp please. Are they showing that? Whats is Ableton Link 3? I'm about to EXPLODE!
No timestamp - it's on the 2.11 product page at the bottom. Ableton Link 3 is the latest version of Ableton Link (it supports transport start/stop commands).

I wonder if when the new firmware drops we have a "Favorites" button for MPC's in the US and a "Favourites" button for MPCs in the UK? Is the Firmware all in US english or is there a UK version?

How does one become a beta tester? I'm a good candidate - have 3 of the current gen mpc's, no serious production needs with any of them, experience with digging around under the hood, and too much free time.

You have to apply. Simple process and they appear to acceptingoat applicants. If you're wanting early access to 2.11 then you'll not find it that way, however.
