Will MPC One work with USB hub for USB drive + controller?

Yes, I will find out when I finally get my unit...

But, in the meantime, I was curious if I could have a controller (Launchpad X or Komplete M32 depending on the need) and USB drive connected to MPC One at the same time via small - non-powered - USB hub?

I wouldn't have to do that if my laptop had an SD Card reader, but since it doesn't I'll have to rely on USB drive to keep and transfer files - samples, expansions, projects - back & forth. I ordered a very small one (physically), so that it doesn't stick out of the unit as much

Yes, although the hub might flush back USB noise to the MPC. The MPC will accept any device that has a linux driver (almost everything has).
