I have an MPC One and I’m sampling audio from my macbook headphones jack with a 1/8 stereo to dual 1/4 mono cable. Do I need something else for better quality or do I just plug straight?

Headphone output of a Mac (i.e. its built in audio device) is okay quality, but you would get better quality investing is a proper audio interface, i.e. USB or thunderbolt etc. You can also look at sampling audio 'internally' by converting the audio into a WAV file within your Mac and just loading it into your MPC. On a Mac you could use Soundflower which is a virtual audio device. For example, set this as the MPC Software 'input' audio device, record your audio in the sampler, save and load into the MPC One.
