MPC one plus and turntable hookup

I apologize if this has been gone over before but I think it's a bit more specific so hopefully that's ok. I was thinking of using an rp700k2 with Concorde mix mk2 cartridges into an Allen and heath xone 23 into the inputs on the MPC so I would use RCA out to TS cables for the inputs on the one +?

The other question is have is with recording level would it be preferable to set the output level on the mixer and leave the mpc rec level at max or, mixer at max and adjust input with MPC recording level?

The incoming audio meter is it just a green yellow red meter on the screen or does it have actual dbfs to set the level ?
