Most of the stuff I make is Instrumental, and I find that a good way to keep things intersting is to have as many different parts that fit together as you can. Sample different Instruments from different records then put them all in the same key. Work around the bassline. You may have a flute sample a guitar sample that do not sound good together, but if they both sound good with the bass, you can use them at different times. For example, start with an intro, kick into a verse, and maybe bring in the flute part... build a chorus and add some more instruments on top of the flute... Then go to a breakdown and bring in just the guitar and some bongos, then kick back into a verse with the flute or something else switch it up every few bars, if not every bar in a subtle way. Have different versions of your samples and switch between them, switch up the drums, if you have a great arsenal of different instrument samples, you can always make it interesting for the listener. Even if you bring in a new part very quietly in the background, it all adds to the complexity of the track. Also I like to use vocal samples, for example I found this crazy accapella at the start of one song on a 1920s russian opera record, It was mad obscure, but it fit the beat perfectly, I didnt even have to change the key. Anyway, the vocals started of with a guy singing in russian, and then moved on to a lady singing the same words. So I brought in the guy singing in the intro, built it up to kick into a verse, went to a breakdown with chopped up samples of the lady, and then kicked in with the lady singing for the chorus.
Anyway, the main thing is to load up your MPC with as many different useable samples as you can, even if you dont use them all. Then go to work. Make something, and when you have a rough beat that has a "feel" to it, play it and then start diggin through your collection for more shit that you can incorporate into it, playing the turntable over the top of the MPC to get an idea of whether it will work or not.
