su-premes sampling

wassup people
check this vid below of the legendary su-preme, he's doing this thing where he pitches up and down a sample... he keeps saying "give it the 16 levels, give it about a 10/13 etc...
please could someone explain to me what steps he goes thru on the MPC to do this (as if its done using the JJ OS)

No offence but read ur manual. I have no clue how to do it on new mpc's but it should be fairly straight forward.
